Ingredients

  • 200 grams unsalted roasted peanuts
  • 250 grams granulated sugar
  • 120 ml light corn syrup
  • 60 ml water
  • 2 tablespoons unsalted butter
  • 0.5 teaspoons baking soda
  • 1 teaspoons vanilla extract
  • 1 pinch sea salt (optional, for sprinkling)

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat and lightly grease it to prevent sticking.

Step 2

In a medium saucepan, combine the sugar, light corn syrup, and water. Stir gently to combine without splashing sugar crystals onto the sides of the pan.

Step 3

Place the saucepan over medium heat and bring the mixture to a boil. Avoid stirring once it starts boiling to prevent crystallization.

Step 4

Attach a candy thermometer to the side of the saucepan and cook the syrup until it reaches 150°C (300°F), the hard crack stage. This will take about 10-15 minutes; watch closely to ensure it doesn’t burn.

Step 5

Once the syrup reaches 150°C, immediately remove the saucepan from heat and carefully stir in the butter, peanuts, vanilla extract, and baking soda. The mixture will bubble up, so stir quickly and evenly.

Step 6

Pour the mixture onto the prepared baking sheet and spread it out evenly using a heat-resistant spatula or the back of a spoon. Work quickly as the mixture will harden as it cools.
