  • 500 g beef chuck or brisket, cut into chunks

  • 4 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp Shaoxing wine or dry sherry
  • 3 cups beef stock or water
  • 1 tbsp rock sugar or white sugar
  • 2 pieces star anise
  • 1 piece cinnamon stick
  • 2 pieces bay leaves
  • 1 tsp salt
  • 2 tbsp neutral cooking oil
  • 2 stalks scallions, chopped (optional, for garnish)

Directions

Step 1

1. Heat a large pot or Dutch oven over medium-high heat and add the cooking oil.

2. Sear the beef chunks on all sides until browned. Remove the beef and set aside.

3. In the same pot, lower the heat to medium and sauté the sliced onion, garlic, and ginger until fragrant, about 2-3 minutes.

4. Deglaze the pot by adding the Shaoxing wine, scraping up any browned bits from the bottom.
