  • 400 grams beef (sirloin or flank steak)
  • 3 medium ripe tomatoes
  • 2 stalks scallions (green onions)
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 50 milliliters water
  • 2 tablespoons vegetable oil
  • 1 teaspoon white sugar
  • 1 teaspoon sesame oil (optional)
  • 1 pinch salt
  • 1 pinch white pepper

Directions

Step 1

Slice the beef thinly against the grain into bite-sized strips. Place the beef in a bowl and marinate with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, a pinch of salt, and a pinch of white pepper. Mix well and let it marinate for 15 minutes.

Step 2

While the beef is marinating, dice the tomatoes into 1-inch chunks. Finely chop the garlic and slice the scallions into 1-inch lengths, separating the white and green parts.

Step 3

In a small bowl, mix together the remaining 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 50 milliliters of water, and 1 teaspoon of sugar. Set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. When the oil is hot, add the beef slices and stir-fry for 1-2 minutes until the beef is just browned. Remove the beef from the wok and set aside.
