  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1 teaspoon Sugar
  • 1 tablespoon Ginger
  • 2 cloves Garlic
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Sesame oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 stalks Scallions (optional)
  • 1 cup Water

Directions

Step 1

Slice the beef thinly against the grain into strips about 5 cm long. In a bowl, mix the beef with 1 tablespoon soy sauce, 1 tablespoon Shaoxing wine, 2 teaspoons cornstarch, and 1 teaspoon sesame oil. Marinate for 15 minutes.

Step 2

While the beef marinates, peel the onions and cut them into thin wedges. Mince the ginger and garlic.

Prepare the sauce by combining the remaining 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon dark soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon sugar, and 1/2 cup water in a small bowl. Set aside.

Heat a wok or large skillet over high heat. Add 2 tablespoons vegetable oil and wait until it begins to shimmer.
