Ingredients

  • 450 g beef (sirloin or flank steak)
  • 3 large tomatoes
  • 3 pieces garlic cloves
  • 1 tbsp ginger
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp cornstarch
  • 60 ml water
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 2 stalks green onions
  • 0.25 tsp salt
  • 0.25 tsp white or black pepper

Directions

Step 1

Slice the beef thinly against the grain into strips about 5 cm long. Place the beef in a bowl and add 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of cornstarch, and a pinch of pepper. Massage the marinade into the beef and let it rest for 10 minutes.

Step 2

While the beef marinates, cut the tomatoes into wedges and remove the stem parts. Mince the garlic cloves and grate the ginger. Chop the green onions into 4 cm pieces.

Step 3

In a small bowl, mix 60 ml of water with 1 teaspoon of cornstarch, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, a pinch of salt, and 1 teaspoon of sugar. Set this sauce aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large wok or pan over medium-high heat. Once hot, add the marinated beef and stir-fry for 2-3 minutes until the beef is browned but not fully cooked. Remove the beef from the pan and set aside.

Step 5

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the garlic and ginger, stirring for 30 seconds until fragrant.

Step 6

Add the tomato wedges to the pan and stir-fry for 1-2 minutes until the tomatoes begin to soften and release their juices.

Step 7

Return the beef to the pan along with the prepared sauce. Stir everything together and cook for another 2-3 minutes until the beef is fully cooked and the sauce has thickened slightly.

Step 8

Toss in the chopped green onions and give the stir-fry a quick mix. Taste and adjust seasoning if needed.

Step 9

Serve the beef and tomatoes hot over steamed rice for a complete meal.
