Ingredients

  • 1 lb beef sirloin
  • 3 tbsp soy sauce
  • 2 tsp cornstarch
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • 8 oz snow pea pods, trimmed
  • 1 tbsp water
  • 2 green onions, sliced
  • 0.25 tsp white or black pepper
  • 2 cups cooked white rice (optional, for serving)

Directions

Step 1

Slice the beef sirloin thinly against the grain into bite-sized strips.

Step 2

In a small bowl, mix 2 tablespoons of soy sauce and cornstarch together until smooth. Add the beef strips and toss to coat. Let marinate for 10 minutes.

Step 3

While the beef marinates, prepare the sauce by mixing the remaining 1 tablespoon of soy sauce, oyster sauce, sesame oil, and water in a separate bowl. Set aside.

Step 4

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan.

Step 5

Add the marinated beef to the pan and stir-fry for 2-3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.

Add the remaining 1 tablespoon of vegetable oil to the pan. Add the minced garlic and ginger and stir-fry for 30 seconds until fragrant.

Add the pea pods and stir-fry for 2 minutes until they are bright green and slightly tender.

Return the beef to the pan and pour in the prepared sauce. Stir everything together and cook for 2-3 more minutes, until the beef is cooked through and the sauce thickens.

Season with white or black pepper to taste, and sprinkle the sliced green onions on top.

Step 10

Serve immediately over cooked white rice, if desired.
