Ingredients

  • 300 grams beef flank steak
  • 200 grams asparagus
  • 2 tablespoons black bean sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic cloves
  • 1 teaspoon fresh ginger
  • 2 tablespoons cooking oil
  • 0.5 teaspoon ground black pepper
  • 1 stalk spring onion (scallions)

Directions

Step 1

Thinly slice the beef flank steak against the grain into bite-sized strips. Place the beef in a bowl, and mix with cornstarch, 1 teaspoon of soy sauce, and 1 tablespoon of water. Set aside to marinate for 10 minutes.

Step 2

Trim the tough ends off the asparagus, and cut the stalks into 2-inch (5 cm) pieces.

Step 3

Finely mince the garlic and grate the ginger. Thinly slice the spring onion for garnish and set aside.

Step 4

In a small bowl, combine black bean sauce, oyster sauce, remaining 1 teaspoon of soy sauce, sesame oil, and ground black pepper. Mix well to form the stir-fry sauce.

Step 5

Heat 1 tablespoon of cooking oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and stir-fry for 1-2 minutes until browned but not fully cooked. Remove the beef from the wok and set aside.

Step 6

Add the remaining 1 tablespoon of cooking oil to the wok. Toss in the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.

Add the asparagus to the wok and stir-fry for 2-3 minutes until bright green and tender-crisp.

Return the beef to the wok, and pour in the prepared black bean sauce. Stir well to coat all ingredients evenly.

Cook for another 1-2 minutes until the beef is fully cooked and the sauce is slightly thickened.

Step 10

Transfer the stir-fry to a serving plate and garnish with sliced spring onions. Serve immediately with steamed rice or noodles.
