Ingredients

  • 2 pounds Pork shoulder (boneless, trimmed of excess fat)
  • 3 tablespoons Soy sauce
  • 3 tablespoons Hoisin sauce
  • 3 tablespoons Honey
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons Brown sugar
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Five-spice powder
  • 1 teaspoon Grated fresh ginger
  • 2 cloves Minced garlic
  • 1 teaspoon Red food coloring (optional)
  • 1 tablespoon Vegetable oil
  • 1 cup Water

Directions

Step 1

Cut the pork shoulder into long strips about 2 inches wide for even cooking.

Step 2

In a large mixing bowl, whisk together the soy sauce, hoisin sauce, honey, Shaoxing wine, brown sugar, oyster sauce, sesame oil, five-spice powder, grated ginger, minced garlic, and red food coloring (if using). Reserve 1/4 cup of the marinade for basting later.

Place the pork strips into a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring all pieces are fully coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours or preferably overnight.

After 20 minutes of roasting, brush the pork generously with the glaze. Continue roasting for another 15-20 minutes, basting every 5 minutes, until the pork is deeply caramelized and the internal temperature reaches 160°F (71°C).

Remove the pork from the oven and let it rest for 10 minutes before slicing.
