Ingredients

  • 2 lbs Pork spare ribs
  • 4 tbsp Soy sauce
  • 3 tbsp Hoisin sauce
  • 2 tbsp Shaoxing wine (or dry sherry)
  • 2 tbsp Honey
  • 1 tbsp Sesame oil
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, grated
  • 1 tsp Five-spice powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 stalks Scallions, chopped (for garnish)
  • 1 tbsp Sesame seeds (for garnish)

Directions

Step 1

Rinse the pork ribs under cold water and pat dry with paper towels. Use a sharp knife to remove the membrane on the back of the ribs if it’s still attached.

Step 2

In a large mixing bowl, combine the soy sauce, hoisin sauce, Shaoxing wine, honey, sesame oil, minced garlic, grated ginger, five-spice powder, salt, and pepper. Whisk until smooth to create the marinade.

Step 3

Place the ribs into a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 4

Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and place a wire rack on top. Lightly grease the rack with oil.

Step 5

Remove the ribs from the marinade and allow any excess marinade to drip off. Set the used marinade aside as it will be used for basting later.

Step 6

Arrange the ribs on the prepared rack in a single layer. Cover them loosely with another sheet of foil to prevent them from drying out.

Step 7

Bake the ribs in the preheated oven for 1 hour. Halfway through, baste the ribs with the reserved marinade to keep them moist and flavorful.

Step 8

After 1 hour, remove the top foil and increase the oven temperature to 400°F (200°C). Continue baking for an additional 20-30 minutes, basting every 10 minutes, until the ribs are deeply caramelized and sticky.

Step 9

Remove the ribs from the oven and let them rest for 5 minutes. Slice the ribs into individual pieces and transfer them to a serving platter.

Step 10

Garnish the ribs with chopped scallions and a sprinkle of sesame seeds. Serve immediately with steamed rice or your favorite side dishes.
