Ingredients

  • 500 grams Boneless, skinless chicken breasts
  • 4 tablespoons Cornstarch
  • 1 large Egg
  • 1 teaspoon Salt
  • 4 tablespoons Vegetable oil
  • 2 cloves Garlic cloves, minced
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 120 milliliters Chicken broth
  • 1 teaspoon Sugar
  • 75 grams Almonds, toasted
  • 2 stalks Green onions, thinly sliced
  • 4 servings Cooked jasmine rice

Directions

Step 1

Cut the chicken breasts into bite-sized pieces. In a medium bowl, mix the cornstarch, egg, and salt to create a light batter.

Step 2

Add the chicken pieces to the batter and toss until evenly coated.

Step 3

Heat 3 tablespoons of vegetable oil in a large non-stick skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, approximately 4-5 minutes per batch. Remove chicken and set aside on a plate lined with paper towels.
