Ingredients

  • 1 cup flat-leaf parsley
  • 2 tablespoons fresh oregano leaves
  • 1 teaspoon red chili flakes
  • 1 teaspoon smoked paprika
  • 4 garlic cloves
  • 3 tablespoons red wine vinegar
  • 0.5 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 red bell pepper (roasted and peeled)

Directions

Step 1

Rinse and dry the parsley and oregano. Finely chop the parsley and oregano leaves, or use a food processor for a finer texture.

Step 2

Peel the garlic cloves and roughly chop them. Add them to the food processor, or mince them very finely if preparing by hand.

Step 3

In a food processor or mixing bowl, combine the parsley, oregano, red chili flakes, smoked paprika, and chopped garlic.

Step 4

Chop the roasted red bell pepper into small pieces. Add it to the mixture and blend until evenly incorporated.

Step 5

Add the red wine vinegar, olive oil, lemon juice, salt, and black pepper. Blend or whisk together until the sauce is consistent and vibrant.

Step 6

Taste and adjust seasoning as needed. Add more salt or red chili flakes if desired for extra tang or heat.

Step 7

Transfer the chimichurri rojo to a jar or airtight container and let it sit for at least 30 minutes before serving. This allows the flavors to meld together beautifully.

Step 8

Serve as a sauce alongside grilled Brazilian-style steak or other roasted meats. It can also be used as a marinade for meats before grilling.
