Ingredients

  • 8 pieces Large green chillies
  • 4 medium Potatoes
  • 1 medium Onion
  • 1 tablespoon Ginger garlic paste
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 2 tablespoons Fresh coriander leaves
  • 3 tablespoons Oil
  • 0 to taste Salt

Directions

Step 1

Wash and dry the green chillies. Slit them lengthwise on one side, taking care not to break them, and remove the seeds to create space for stuffing.

Step 2

Peel and boil the potatoes until soft. Mash them in a large bowl and set aside.

Step 3

Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.

Step 4

Finely chop the onion and add it to the pan. Sauté until golden brown.

Step 5

Add the ginger garlic paste and sauté for 1-2 minutes until fragrant.

Step 6

Reduce the heat and add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for 1 minute.

Step 7

Add the mashed potatoes to the pan and mix until the masala is evenly incorporated. Cook for 3 minutes and turn off the heat.

Step 8

Chop the fresh coriander leaves and mix them into the potato masala. Allow the mixture to cool slightly.

Step 9

Stuff each green chilli with the prepared potato masala, pressing gently to fill them uniformly.

Step 10

Heat the remaining 2 tablespoons of oil in a pan over low to medium heat. Place the stuffed chillies in the pan and cover with a lid.

Step 11

Cook for 8-10 minutes, flipping the chillies occasionally to ensure they are evenly cooked and slightly charred.

Step 12

Remove from the heat and transfer to a serving plate. Garnish with additional coriander leaves, if desired, and serve hot as a snack or side.
