Ingredients

  • 250 grams spaghetti (or your preferred pasta)
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 teaspoon red chili flakes
  • 150 grams canned tuna in olive oil (drained)
  • 200 grams cherry tomatoes, halved
  • 1 piece lemon, juiced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons parsley, finely chopped
  • 30 grams Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

Step 2

In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Step 3

Add the red chili flakes to the pan and stir for 30 seconds to release their flavor.

Step 4

Stir in the drained canned tuna, breaking it into chunks with a wooden spoon. Cook for 2-3 minutes until heated through.

Step 5

Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to soften and release their juices.

Step 6

Pour in the freshly squeezed lemon juice, and season with salt and black pepper. Stir well to combine.

Step 7

Add the cooked pasta to the pan and toss to coat in the sauce. If the mixture seems too dry, gradually add the reserved pasta water a few tablespoons at a time until you achieve the desired consistency.

Step 8

Remove the pan from the heat and stir in the chopped parsley.
