Ingredients

  • 4 cups Cooked rice
  • 2 tablespoons Vegetable oil
  • 3 Garlic cloves, minced
  • 2 Fresh red chilies, finely chopped
  • 1 Onion, finely diced
  • 1 cup Bell peppers (red or green), julienned
  • 3 tablespoons Soy sauce
  • 2 tablespoons Chili sauce or Sriracha
  • 2 Green onions, chopped
  • 2 Eggs
  • 1 teaspoon Sesame oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 2

Add the minced garlic and chopped chilies, stirring constantly for about 30 seconds until fragrant.

Step 3

Toss in the diced onion and bell peppers, and stir-fry for 2-3 minutes until they start to soften.

Step 4

Push the vegetables to one side of the pan and add another tablespoon of oil to the empty side. Crack in the eggs and scramble them until just set, then mix them with the vegetables.

Step 5

Add the cooked rice to the pan, breaking up any clumps with a spatula or spoon.

Step 6

Drizzle the soy sauce, chili sauce, and sesame oil over the rice, and sprinkle with salt and black pepper. Stir everything together thoroughly to coat the rice evenly.
