Ingredients

  • 400 g Black beans (cooked or canned, drained and rinsed)

  • 1 Green chili (finely chopped)
  • 2 tbsp Tomato paste
  • 400 g Chopped tomatoes (canned or fresh)
  • 250 ml Beef stock
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Chili powder
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 200 g All-purpose flour
  • 300 ml Milk
  • 2 Eggs
  • 1 tbsp Butter (for greasing)
  • 2 tbsp Fresh cilantro (for garnish, optional)

Directions

Step 1

Heat a large skillet or saucepan over medium heat and add the olive oil.

Add the chopped onion and sauté for 2-3 minutes until soft. Stir in the minced garlic, diced red bell pepper, and chopped green chili. Cook for another 2 minutes.
