Ingredients

  • 2 cups cooked or canned black beans
  • 1 cup cooked or canned kidney beans
  • 2 jalapeño peppers, diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup sour cream or Greek yogurt
  • 0.25 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Rinse and drain the black beans and kidney beans if using canned beans.

Step 2

Heat the olive oil in a small skillet over medium heat. Add the minced garlic and diced jalapeños and sauté for 1-2 minutes, until fragrant.

Step 3

In a food processor or blender, combine the black beans, kidney beans, sautéed garlic and jalapeños, lime juice, ground cumin, chili powder, smoked paprika, salt, and black pepper.

Step 4

Blend the mixture until smooth, scraping down the sides as needed. If the consistency is too thick, add a tablespoon of water or olive oil at a time until you reach your desired texture.

Step 5

Transfer the bean dip to a serving bowl. Stir in the sour cream or Greek yogurt for additional creaminess.

Step 6

For serving, garnish with shredded cheddar cheese and chopped fresh cilantro, if desired.

Step 7

Serve warm or at room temperature with tortilla chips, vegetable sticks, or pita bread.
