Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter (cold, cubed)
  • 150 grams Sharp cheddar cheese (grated)
  • 1 teaspoon Baking powder
  • 1 teaspoon Red chili flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Milk (cold)
  • 1 Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and ground black pepper.

Step 3

Add the cold, cubed unsalted butter into the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Step 4

Stir in the grated cheddar cheese and red chili flakes until evenly distributed.

Step 5

Add the cold milk, one tablespoon at a time, and gently combine the mixture with a fork until it just comes together into a dough. Be careful not to overwork the dough.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Roll the dough out to about 0.5 cm (1/4 inch) thickness.

Step 7

Using a cookie cutter or the rim of a glass, cut out biscuit shapes and place them on the prepared baking tray, spacing them slightly apart.

Step 8

Brush the tops of the biscuits with the beaten egg to create a glossy finish.

Step 9

Bake the biscuits in the preheated oven for 12-15 minutes, or until they are golden brown and crisp around the edges.

Step 10

Remove the biscuits from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or store them in an airtight container for up to 5 days. Enjoy your spicy, cheesy biscuits!
