Ingredients

  • 4 medium-sized yellow squash
  • 2 tablespoons olive oil
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth
  • 0.5 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon paprika
  • 0.5 cup ice water

Directions

Step 1

Wash and cut the yellow squash into thin rounds, discarding the ends.

Step 2

Peel and dice the yellow onion and mince the garlic cloves.

Step 3

In a large skillet or saucepan, heat the olive oil over medium heat.

Step 4

Add the diced onion and sauté for 3-4 minutes until translucent.

Step 5

Stir in the minced garlic, ground cumin, and ground coriander, cooking for another 1-2 minutes until fragrant.

Step 6

Add the sliced yellow squash to the skillet and cook for 5-7 minutes, stirring occasionally, until softened and slightly golden.

Step 7

Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook for another 10 minutes, allowing the flavors to meld together.

Step 8

Remove the soup from heat and let it cool slightly for 5-10 minutes.

Step 9

Transfer the soup to a blender (in batches, if necessary) and blend until smooth.

Step 10

Add the Greek yogurt, lemon juice, salt, black pepper, and half a cup of ice water to the blender and blend again until thoroughly combined.

Step 11

Taste and adjust seasonings, adding more salt or lemon juice as needed.

Step 12

Refrigerate the soup for at least 2 hours or until thoroughly chilled.

Step 13

Serve the soup chilled, garnished with a sprinkle of paprika and fresh cilantro on top.
