Ingredients

  • 300 grams Soba noodles (buckwheat noodles)
  • 100 ml Soy sauce
  • 50 ml Mirin (sweet rice wine)
  • 150 ml Dashi stock (or water with dashi powder)
  • 1 tablespoon Sugar
  • 2 stalks Green onions, finely sliced
  • 1 sheet Nori (seaweed), shredded
  • 1 teaspoon Wasabi, optional
  • 1 tablespoon Sesame seeds, toasted
  • 5 pieces Ice cubes

Directions

Step 1

Bring a large pot of water to a boil. Add the soba noodles and cook according to the package instructions, usually 4-5 minutes. Stir occasionally to prevent sticking.

Step 2

Once the noodles are cooked, drain them and immediately rinse them under cold running water to remove excess starch. Place the noodles in a bowl of ice water to chill.

In a small saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Remove from heat and allow to cool to room temperature, then refrigerate until chilled.
