Ingredients

  • 1 pound Raw jumbo shrimp (peeled and deveined, tails on)
  • 1 teaspoon Kosher salt
  • 1 whole Lemon (sliced, for poaching water)
  • 4 cups Ice
  • 0.25 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Sesame oil
  • 1 teaspoon Brown sugar
  • 1 clove Garlic (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Fresh basil leaves (chopped)
  • 2 stalks Green onions (thinly sliced for garnish)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Fill a large pot with water and add the kosher salt and lemon slices. Bring to a boil over medium-high heat.

Step 2

While the water is heating, prepare an ice bath by filling a large bowl with 4 cups of ice and cold water; set aside.

Step 3

Carefully add the shrimp to the boiling water and cook for 2-3 minutes, or until the shrimp are pink and opaque.

Step 4

Using a slotted spoon, immediately transfer the cooked shrimp to the prepared ice bath to stop the cooking process. Let the shrimp chill for 5 minutes.

Step 5

While the shrimp is chilling, prepare the basil ponzu sauce. In a small mixing bowl, whisk together the soy sauce, rice vinegar, lime juice, sesame oil, brown sugar, minced garlic, and grated ginger until the sugar dissolves.

Step 6

Stir in the chopped basil leaves to the sauce and set aside.

Step 7

Drain the shrimp from the ice bath and pat them dry with paper towels. Arrange them on a serving platter.

Step 8

Drizzle the basil ponzu sauce over the shrimp or serve it on the side as a dipping sauce.

Step 9

Garnish the shrimp with sliced green onions and sesame seeds, if desired. Serve immediately.
