In a large pot, melt the butter over medium heat.
Add the chopped onion, carrots, and celery, and sauté for 5-7 minutes until softened.
Stir in the minced garlic and tomato paste, cooking for an additional 1-2 minutes.
Pour in the dry white wine and scrape the bottom of the pot to deglaze. Simmer for 2-3 minutes to allow the alcohol to cook off.
