Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 6 large Egg yolks
  • 0.3333 cup Granulated sugar
  • 2 tablespoons Cocoa powder
  • 1 teaspoon Instant espresso powder
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Dark chocolate (grated, for garnish)
  • 1 cup Whipped cream

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, cocoa powder, and instant espresso powder. Place the saucepan over medium heat and whisk until the cocoa powder and espresso powder dissolve. Bring the mixture to a gentle simmer but do not let it boil.

Step 2

Meanwhile, in a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Step 3

Slowly pour about 1/2 cup of the hot milk mixture into the egg yolk mixture, whisking constantly, to temper the eggs. Gradually pour the tempered egg mixture back into the saucepan with the remaining hot milk, whisking continually.

Step 4

Cook the mixture over low heat, stirring constantly with a wooden spoon, until it thickens slightly and coats the back of the spoon. This should take about 5-7 minutes. Do not let the mixture boil, as the eggs may curdle.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract and ground nutmeg. Allow the mixture to cool to room temperature, then transfer it to a pitcher or container. Cover and refrigerate for at least 2 hours or until thoroughly chilled.

Step 6

Before serving, give the eggnog a good stir. Pour into glass mugs or cups and top with a dollop of whipped cream. Sprinkle grated dark chocolate on top for garnish.
