Ingredients

  • 500 grams fresh green beans
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 piece garlic clove, minced
  • 1 piece shallot, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 10 pieces ice cubes

Directions

Step 1

Rinse the green beans thoroughly and trim the ends.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and tender-crisp.

Step 3

While the beans are cooking, prepare a large bowl of ice water by filling it with cold water and adding the ice cubes.

Step 4

Once the green beans are done, immediately transfer them with a slotted spoon into the ice water to halt the cooking process. Let them chill for 2 minutes, then drain well and pat dry with a clean kitchen towel.

Step 5

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, and finely chopped shallot. Season with salt and freshly ground black pepper to taste.

Step 6

Place the chilled green beans in a serving bowl. Drizzle the vinaigrette over the beans and toss until evenly coated.

Step 7

Garnish with chopped fresh parsley and lemon zest for added brightness.

Step 8

Serve cold or at room temperature. Enjoy your Chilled Green Bean Vinaigrette as a refreshing side dish!
