Wash the red potatoes and cut them into bite-sized chunks.
Trim the ends of the green beans and cut them into 2-inch pieces.
Fill a large pot with water and bring it to a boil. Add the potato chunks and cook for 12-15 minutes, or until they are fork-tender. Use a slotted spoon to transfer the potatoes to a large bowl. Set aside to cool.
In the same pot of boiling water, add the green beans and blanch them for 2-3 minutes, until they are bright green and slightly tender. Drain and immediately transfer the green beans to a bowl of ice water to stop the cooking process. After 5 minutes, drain and set aside.
