Ingredients

  • 6 stalks celery
  • 1 medium yellow onion
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Wash and chop the celery into small pieces. Dice the onion finely.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

Stir in the chopped celery and cook for another 5 minutes, stirring occasionally.

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Gradually pour in the vegetable broth while stirring to prevent lumps. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes or until the celery is very tender.
