Ingredients

  • 3 cups fresh corn (about 4 ears)
  • 1.5 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

If using fresh corn, remove the husks and silk from the ears. Bring a large pot of water to a boil and cook the corn for 2-3 minutes until slightly tender. Remove and let cool before cutting the kernels off the cob. (You can substitute frozen corn by thawing it first.)

Step 2

In a large mixing bowl, combine the corn kernels, cherry tomatoes, diced cucumber, red bell pepper, and red onion.

Step 3

In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper to create the dressing.

Step 4

Pour the dressing over the salad ingredients and toss until everything is evenly coated.

Step 5

Add the chopped parsley and cilantro to the bowl. Gently mix to combine.

Step 6

Cover the bowl and chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 7

Before serving, give the salad one final toss and enjoy as a side dish or light main course.
