Ingredients

  • 12 pieces Fresh green chilies
  • 5 pieces Garlic cloves
  • 1 tablespoon Ginger
  • 2 tablespoons Tamarind pulp
  • 3 tablespoons Roasted peanuts
  • 2 tablespoons Coriander leaves
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Salt
  • 1 teaspoon Vegetable oil
  • 3 tablespoons Water

Directions

Step 1

Heat 1 teaspoon of vegetable oil in a small pan over medium heat.

Step 2

Add the cumin seeds and let them sizzle for 30 seconds.

Step 3

Add the green chilies, garlic cloves, and a teaspoon of grated ginger to the pan, and sauté for 2-3 minutes until the chilies are slightly blistered.

Step 4

Remove the pan from heat and let the sautéed ingredients cool for a few minutes.

Step 5

In a blender or food processor, combine the cooled ingredients, tamarind pulp, roasted peanuts, coriander leaves, salt, and 3 tablespoons of water.

Step 6

Blend the mixture until it reaches a smooth consistency. Add a bit more water if needed to achieve your desired texture.

Step 7

Taste the chutney and adjust salt or tamarind if needed. Blend once more if adjustments are made.

Step 8

Transfer the chutney to a serving bowl or jar. Serve immediately or refrigerate for up to a week.
