Ingredients

  • 4 large sweet potatoes or yams
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or turkey (optional for vegetarian)
  • 15 ounces canned diced tomatoes
  • 15 ounces black beans, drained and rinsed
  • 15 ounces kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water or broth
  • 0.25 cup sour cream or plain Greek yogurt (optional)
  • 0.5 cup shredded cheese (optional)
  • 0.25 cup chopped green onions (optional)
  • 2 tablespoons fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the sweet potatoes or yams thoroughly and pierce each one several times with a fork.

Step 3

Place the sweet potatoes on a baking sheet lined with parchment paper or foil. Bake for 45-50 minutes, or until soft and easily pierced with a knife.

Step 4

While the sweet potatoes bake, heat the olive oil in a large pan over medium heat.

Step 5

Add the diced onion to the pan and sauté for 3-4 minutes, until softened and translucent.

Step 6

Stir in the minced garlic and cook for another minute until fragrant.

Step 7

If using meat, add the ground beef or turkey to the pan and cook, breaking it up with a spoon, until browned and no longer pink. Drain any excess fat.

Step 8

Add the canned diced tomatoes, black beans, kidney beans, tomato paste, chili powder, cumin, paprika, salt, black pepper, and water or broth. Stir to combine.

Step 9

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld together.

Step 10

Once the sweet potatoes are finished baking, carefully remove them from the oven and let them cool slightly.

Step 11

Slice each sweet potato down the center lengthwise, being careful not to cut all the way through.

Step 12

Using a fork, gently fluff the insides of each potato to create a cavity for the chili filling.

Step 13

Spoon the hot chili mixture into each sweet potato until generously filled.

Step 14

Top with optional garnishes such as sour cream, shredded cheese, green onions, and fresh cilantro.

Step 15

Serve immediately and enjoy your Chili Stuffed Sweet Potatoes Yams!
