Ingredients

  • 2 tablespoons olive oil
  • 500 grams ground beef
  • 1 medium, finely diced onion
  • 1 medium, finely diced red bell pepper
  • 2 minced garlic cloves
  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup, drained and rinsed kidney beans
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large sheets, thawed puff pastry sheets
  • 1 beaten egg
  • 100 grams, grated cheddar cheese

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.

Step 3

Add the diced onion, red bell pepper, and minced garlic. Sauté for 5 minutes until the vegetables are soft.

Step 4

Stir in the diced tomatoes, tomato paste, kidney beans, chili powder, cumin, paprika, salt, and black pepper. Simmer the mixture on low heat for 10 minutes, stirring occasionally.

Step 5

Remove the chili mixture from the heat and allow it to cool slightly.

Step 6

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 7

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into quarters, creating 16 squares in total.

Step 8

Spoon a tablespoon of the chili mixture onto the center of each pastry square. Top with a small amount of grated cheddar cheese.

Step 9

Fold the corners of each square toward the center to form a parcel and pinch the edges together to seal.

Step 10

Brush each parcel with beaten egg to create a golden finish during baking.

Step 11

Place the parcels on the prepared baking sheet and bake for 15-20 minutes, or until the pastry is puffed and golden brown.

Step 12

Remove from the oven and let the parcels cool slightly before serving.
