Ingredients

  • 4 large Eggs
  • 2 tablespoons Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 small (finely chopped) Fresh red chili
  • 0.5 medium (diced) Green bell pepper
  • 0.5 medium (finely chopped) Onion
  • 0.5 cup (shredded) Cheddar cheese
  • 1 tablespoon Olive oil
  • 1 tablespoon (chopped, optional) Fresh cilantro

Directions

Step 1

In a medium bowl, crack the eggs and whisk them until well combined.

Step 2

Add the milk, salt, and black pepper to the eggs, and whisk again.

Step 3

Heat the olive oil in a nonstick skillet over medium heat.

Step 4

Add the chopped onion, green bell pepper, and fresh red chili to the skillet. Sauté for 2-3 minutes, or until the vegetables are slightly softened.

Step 5

Pour the egg mixture into the skillet, ensuring it spreads evenly over the pan.

Step 6

As the eggs begin to set, use a spatula to gently lift the edges to let uncooked eggs flow underneath.

Step 7

When the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheddar cheese evenly over one half of the omelet.

Step 8

Fold the omelet in half, covering the cheese, and let it cook for another 1-2 minutes to melt the cheese completely.

Step 9

Carefully slide the omelet onto a plate. Garnish with chopped fresh cilantro, if desired.

Step 10

Serve hot and enjoy your spicy and delicious Chili Omelet!
