Ingredients

  • 1 pound Ground beef
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 14.5 ounces (1 can) Diced tomatoes
  • 8 ounces (1 can) Tomato sauce
  • 15 ounces (1 can, drained and rinsed) Kidney beans
  • 2 cups Beef broth
  • 1.5 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 ounces Elbow macaroni
  • 1 cup, shredded Sharp cheddar cheese
  • 2 stalks, sliced for garnish (optional) Green onions

Directions

Step 1

In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

Step 2

Transfer the cooked ground beef to your crock pot.

Step 3

Add diced onion, minced garlic, canned diced tomatoes (with their juices), tomato sauce, kidney beans, and beef broth to the crock pot.

Step 4

Stir in chili powder, ground cumin, paprika, salt, and black pepper, mixing everything together.

Step 5

Cover the crock pot and cook on low for 4-5 hours, or on high for 2-3 hours, to allow the flavors to meld together.

30 minutes before the cooking time is up, add the elbow macaroni to the crock pot. Stir well to combine.
