Ingredients

  • 6 pieces red chilies (long, mild or medium heat)
  • 2 pieces red chili (hot)
  • 2 large red bell peppers
  • 4 pieces garlic cloves
  • 30 grams fresh ginger
  • 500 grams granulated sugar
  • 350 milliliters white wine vinegar
  • 400 grams tomatoes (ripe)
  • 1 teaspoon salt

Directions

Step 1

Start by preparing all the vegetables. Slice the red chilies and the hot chilies lengthwise and remove seeds if you prefer less heat. Roughly chop them.

Step 2

Remove the stems and seeds from the red bell peppers, then dice them into small chunks.

Step 3

Peel the garlic cloves and ginger. Chop both finely or use a food processor to create a paste.

Step 4

In a blender or food processor, combine the red chilies, hot chilies, red bell peppers, garlic, ginger, and tomatoes. Blend until you have a smooth purée.

In a large saucepan, add the purée, sugar, white wine vinegar, and salt. Stir well to combine.
