Ingredients

  • 4 large Russet potatoes
  • 4 cups Vegetable oil
  • 1 pound Ground beef
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 14.5 ounces Canned diced tomatoes
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper
  • 1 cup, shredded Cheddar cheese
  • 2 sliced Scallions
  • 0.5 cup Sour cream

Directions

Step 1

Peel the russet potatoes and cut them into thin fries, about 1/4-inch thick.

Step 2

Soak the cut potatoes in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly with paper towels.

Step 3

Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C).

Step 4

Fry the potatoes in batches until lightly golden, about 3-4 minutes. Remove and drain on a wire rack or paper towels.

Step 5

Once all fries are pre-fried, increase the oil temperature to 375°F (190°C). Fry the potatoes again until crispy and golden brown, about 2-3 minutes. Remove and drain. Sprinkle with salt while still hot.

In a large skillet over medium heat, cook the ground beef until browned and cooked through, breaking it apart with a wooden spoon. Drain any excess grease.
