Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium bell peppers, diced (any color)
  • 14.5 oz can diced tomatoes, undrained
  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 15 oz can black beans, drained and rinsed
  • 15 oz can kidney beans, drained and rinsed
  • 1 cup corn kernels, optional
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.25 tsp cayenne pepper, optional
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 1 cup shredded cheddar cheese (for topping)
  • 0.5 cup sour cream (for topping)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional 1 minute until fragrant.

Step 3

Add the ground beef to the pot and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess fat if needed.

Step 4

Stir in the diced bell peppers and cook for 3-4 minutes until they begin to soften.

Step 5

Mix in the tomato paste, chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and pepper. Stir well to coat the meat and vegetables evenly with spices.

Step 6

Add the diced tomatoes, beef broth, black beans, kidney beans, and corn (if using). Stir to combine.

Step 7

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let the chili cook for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasonings as needed. Add more salt, pepper, or spices to your preference.

Step 9

Serve hot in bowls and garnish with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream.
