Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 3 cloves garlic cloves, minced
  • 1 large red bell pepper, diced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 4 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Step 3

Drain excess fat if necessary, then add the diced onion. Sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and diced red bell pepper. Cook for another 2-3 minutes.

Step 5

Add the canned diced tomatoes, kidney beans, black beans, and beef broth to the pot. Stir to combine.

Step 6

Season the soup with chili powder, ground cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Mix well.

Step 7

Bring the mixture to a simmer over medium heat, then reduce the heat to low and cover the pot. Let it simmer gently for 20-25 minutes, stirring occasionally.

Step 8

Taste the soup and adjust seasonings as needed.

Step 9

Ladle the Chili Con Carne Soup into bowls and garnish with fresh cilantro.

Step 10

Serve with shredded cheddar cheese and a dollop of sour cream if desired, and enjoy!
