Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 1 medium green bell pepper, diced
  • 3 large garlic cloves, minced
  • 1 pound ground beef
  • 1 cup stout beer (such as Guinness)
  • 1 28-ounce can crushed tomatoes
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 1 cup cheddar cheese, shredded (for garnish)
  • 1 cup sour cream (for garnish)
  • 2 stalks green onions, sliced (for garnish)
  • 1 loaf crusty bread or Irish soda bread (for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the chopped onion and diced green bell pepper and sauté for 5-7 minutes, until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes. Drain any excess fat if needed.

Step 5

Pour in the stout beer and let it simmer for 2-3 minutes, scraping the bottom of the pot to deglaze and incorporate the flavors.

Step 6

Stir in the crushed tomatoes, rinsed kidney beans, rinsed black beans, and tomato paste until well combined.

Step 7

Add the ground cumin, chili powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Stir to mix evenly.

Step 8

Reduce the heat to low, cover, and let simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as needed before serving.

Step 10

Ladle the chili into bowls and garnish with shredded cheddar cheese, a dollop of sour cream, and sliced green onions.

Step 11

Serve with crusty bread or Irish soda bread on the side for dipping.
