  • 1 medium Red bell pepper, diced
  • 1 28-ounce can Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 1 tablespoon Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Sugar

Directions

Step 1

Begin by preparing the chicken. Dice the boneless, skinless chicken breasts into bite-sized cubes and set aside.

Step 2

Heat the olive oil in a large skillet or saucepan over medium-high heat. Add the diced chicken and cook until lightly browned and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add a little more olive oil if necessary. Sauté the diced yellow onion over medium heat for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
