Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 2 cans canned diced tomatoes with green chilies (e.g., Rotel)
  • 1 can canned black beans, drained and rinsed
  • 1 can canned corn, drained
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro (optional, for garnish)

Directions

Step 1

Place the boneless, skinless chicken breasts at the bottom of your crock pot.

Step 2

In a medium-sized bowl, mix together the diced tomatoes with green chilies, chicken broth, chili powder, ground cumin, garlic powder, onion powder, salt, and black pepper.

Step 3

Pour the mixture over the chicken breasts in the crock pot, ensuring the chicken is fully covered.

Step 4

Add the drained black beans and corn on top of the chicken mixture. Do not stir.

Step 5

Place the cream cheese block on top of the other ingredients in the crock pot without mixing.

Step 6

Cover and cook on low for 6 hours or on high for 4 hours, until the chicken is tender and easily shredded with a fork.

Step 7

Once the chicken is cooked, carefully remove it from the crock pot and shred it using two forks.

Step 8

Return the shredded chicken to the crock pot and stir well to combine all ingredients. The cream cheese should be fully melted and incorporated at this stage.

Step 9

Add the shredded cheddar cheese and stir until melted and creamy.

Step 10

Taste and adjust seasonings, adding more salt or spices if desired.

Step 11

Serve hot, garnished with fresh cilantro, if desired. This pairs well with rice, tortilla chips, or even over baked potatoes.
