Ingredients

  • 2 pounds Ground beef
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1.5 cups Shredded cheddar cheese
  • 0.5 cup Milk
  • 1 can (4 ounces) Diced green chilies
  • 2 tablespoons Chili seasoning mix
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 0.25 cup Chili sauce
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a standard 9x5-inch loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, diced green chilies, chili seasoning mix, salt, black pepper, chopped onion, and minced garlic.

Step 3

Mix the ingredients gently with your hands or a wooden spoon until just combined. Avoid overmixing as it can make the meatloaf dense.

Step 4

Add 1 cup of the shredded cheddar cheese to the mixture and fold it in evenly.

Step 5

Transfer the meat mixture into the prepared loaf pan and shape it evenly, making sure it’s compact but not overly pressed.

Step 6

In a small bowl, mix together the ketchup and chili sauce. Spread this glaze evenly over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for about 45 minutes. Remove it from the oven, sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top, and return it to the oven.

Step 8

Bake for an additional 15 minutes or until the cheese is melted and bubbly and the internal temperature of the meatloaf reaches 160°F (71°C).

Step 9

Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing. This helps it stay moist and hold its shape.

Step 10

Slice and serve hot. It pairs wonderfully with mashed potatoes, steamed vegetables, or a side salad.
