Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 stalks green onions, sliced
  • 0.5 cup sour cream (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

Step 3

Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are tender, about 5 minutes.

Step 4

Stir in the canned diced tomatoes, kidney beans, tomato paste, chili powder, cumin, paprika, salt, and black pepper.

Step 5

Bring the mixture to a simmer, then reduce the heat to low. Let it cook for 15-20 minutes, stirring occasionally to prevent sticking.

Step 6

Preheat your oven’s broiler on high.

Step 7

Transfer the chili to an oven-safe serving dish (or keep it in the oven-safe pot). Sprinkle the shredded cheddar cheese evenly over the top.

Step 8

Place the dish under the broiler for 2-3 minutes, or until the cheese is melted and bubbling.

Step 9

Remove from the oven and garnish with sliced green onions and dollops of sour cream if desired.

Step 10

Serve hot with your choice of bread, tortilla chips, or over rice.
