  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 14 ounces Canned diced tomatoes
  • 1 cup Kidney beans (drained and rinsed)
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 cup Shredded cheddar cheese
  • 2 stalks Green onions, sliced

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Peel and cut the potatoes into thin fries, about 1/4-inch thick.

Step 3

In a large bowl, toss the fries with olive oil, salt, paprika, and black pepper until well-coated.

Spread the fries in a single layer on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
