  • 2 large jalapeño peppers
  • 1 large serrano peppers
  • 1 small red onion
  • 3 large garlic cloves
  • 0.5 cup fresh cilantro
  • 1 large lime
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground cumin
  • 1 teaspoon olive oil

Directions

Step 1

Preheat a dry skillet or griddle over medium-high heat.

Roughly chop the tomatoes, jalapeños, and serrano peppers. Peel and halve the red onion. Leave garlic cloves in their skins.

Place the tomatoes, jalapeños, serrano pepper, red onion, and unpeeled garlic cloves onto the heated skillet. Roast them for 3-5 minutes, turning occasionally, until they are slightly charred and soft. Remove from heat.

Peel the charred garlic cloves and transfer them to a food processor along with the roasted tomatoes, peppers, and onion.
