Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup Pineapple juice
  • 2 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 0.25 teaspoon Ground black pepper
  • 6 cups Mixed salad greens
  • 4 rings Pineapple slices (canned or fresh)
  • 1 cup Mandarin oranges (canned, drained)
  • 0.5 cup Shredded carrot
  • 2 stalks Green onions, sliced
  • 0.25 cup Honey
  • 2 tablespoons Lime juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 cup Vegetable oil
  • 0.25 cup Toasted almonds

Directions

Step 1

In a medium bowl, combine pineapple juice, soy sauce, brown sugar, and ground black pepper to create a marinade.

Step 2

Place chicken breasts in the marinade, cover, and refrigerate for at least 1 hour (preferably up to 3 hours) to allow flavors to develop.

Step 3

Preheat your grill to medium-high heat.

Step 4

Remove chicken from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F.

Step 5

While the chicken is grilling, prepare the honey-lime dressing. In a small bowl, whisk together honey, lime juice, Dijon mustard, salt, and vegetable oil until well combined. Set aside.

Step 6

In a large salad bowl, combine mixed greens, shredded carrot, mandarin oranges, green onions, and toasted almonds.

Step 7

Slice grilled chicken into thin strips and layer on top of the salad mixture.

Step 8

Grill the pineapple slices for about 2 minutes per side, until grill marks appear, and add them to the salad.

Step 9

Drizzle the honey-lime dressing generously over the salad and toss gently to coat.

Step 10

Serve immediately and enjoy your Grilled Caribbean Chicken Salad!
