Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 pieces Garlic cloves (minced)
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 12 ounces Pasta (penne or fettuccine)
  • 1 cup Grape tomatoes (halved)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.

Step 2

While the pasta is cooking, pat the chicken breasts dry with paper towels. Rub them generously with 1 1/2 tablespoons of Cajun seasoning on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and set aside to rest for a few minutes, then slice into thin strips.
