  • 4 cups black beans, canned (undrained)
  • 3 cups chicken or vegetable broth
  • 2 tablespoons tomato paste
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 2 tablespoons sour cream (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion, minced garlic, diced carrot, and diced celery. Sauté for 5 minutes, or until the vegetables are softened and aromatic.

Add the black beans along with their liquid, chicken or vegetable broth, and tomato paste to the pot. Stir to combine.

Step 4

Stir in cumin, smoked paprika, oregano, ground coriander, salt, and black pepper. Bring the mixture to a simmer.

Reduce the heat to low and let the soup gently simmer for 20 minutes, stirring occasionally to prevent sticking.
