Heat the olive oil in a large pot over medium heat.
Add the diced yellow onion, minced garlic, diced carrot, and diced celery. Sauté for 5 minutes, or until the vegetables are softened and aromatic.
Add the black beans along with their liquid, chicken or vegetable broth, and tomato paste to the pot. Stir to combine.
Stir in cumin, smoked paprika, oregano, ground coriander, salt, and black pepper. Bring the mixture to a simmer.
Reduce the heat to low and let the soup gently simmer for 20 minutes, stirring occasionally to prevent sticking.
Using an immersion blender, blend part of the soup directly in the pot until it reaches your desired consistency. If you don't have an immersion blender, carefully transfer 2 cups of the soup to a blender, purée until smooth, and then return it to the pot.
Stir in the lime juice and adjust seasonings to taste, adding more salt or lime juice if needed.
