Ingredients

  • 1 can (14 oz) Sweetened condensed milk
  • 1 can (12 oz) Evaporated milk
  • 4 Egg yolks
  • 1 cup Granulated sugar
  • 0.5 cup Water
  • 4 Egg whites
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

In a medium saucepan, combine the sweetened condensed milk and evaporated milk. Heat over medium-low heat, constantly stirring with a wooden spoon to prevent sticking or burning.

Step 2

Once the mixture begins to simmer, lower the heat and add the egg yolks, one at a time, stirring quickly to incorporate each yolk before adding the next. Stir continuously for about 15 minutes, or until the mixture thickens and turns a caramel-like consistency. Remove from heat and allow it to cool slightly.

Step 3

While the manjar mixture cools, prepare the meringue. In a small saucepan, combine the sugar and water. Heat over medium heat until the sugar dissolves completely, and the mixture reaches 240°F (116°C) on a candy thermometer.

Step 4

In a stand mixer or large bowl, beat the egg whites on medium-high speed until frothy. Gradually, while beating, pour the hot sugar syrup into the egg whites in a slow, steady stream. Continue whipping until stiff, glossy peaks form. Add the vanilla extract and mix again briefly to combine.

Step 5

Divide the cooled manjar mixture evenly among serving glasses or bowls, filling them about halfway. Spoon or pipe the meringue over the top of each glass, creating smooth or decorative peaks.

Step 6

Sprinkle the meringue with ground cinnamon as a garnish.

Step 7

Chill the Suspiro Limeño in the refrigerator for at least 1 hour before serving. Serve it cold and enjoy!
