Ingredients

  • 500 g medium shrimp, peeled and deveined
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 2 ripe avocados, diced
  • 0.5 red onion, finely chopped
  • 200 g cherry tomatoes, halved
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp lime juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a medium pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes or until they turn pink and opaque. Drain immediately and transfer to a bowl of ice water to cool. Once cooled, pat the shrimp dry with paper towels.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Toss in the cooked shrimp and sauté for an additional 1-2 minutes to coat the shrimp in garlic. Remove from heat and let cool.

Step 3

In a large mixing bowl, gently combine the diced avocados, chopped red onion, and cherry tomatoes.

Add the cooled shrimp to the vegetables and toss gently to avoid mashing the avocado.
