Ingredients

  • 8 pieces Dried red chilies (such as Arbol or Guajillo)
  • 1 cup White vinegar
  • 1 cup Water
  • 3 pieces Garlic cloves
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil

Directions

Step 1

Remove the stems and seeds from the dried red chilies for a milder sauce. If you prefer it spicier, leave some seeds intact.

Step 2

Place the chilies in a saucepan with water and bring to a boil over medium heat. Allow them to simmer for 5-6 minutes, or until the chilies are soft and pliable.

Step 3

Drain the chilies and transfer them to a blender or food processor.

Step 4

Add the white vinegar, garlic cloves, sugar, and salt to the blender with the softened chilies.

Step 5

Blend until smooth, adding a tablespoon of water at a time if the mixture is too thick to blend easily.

Step 6

In a small skillet, heat olive oil over medium heat until shimmering. Carefully pour the blended sauce into the skillet (be cautious, as it may splatter) and stir well.

Step 7

Simmer the sauce for 3-4 minutes to marry the flavors and slightly thicken it.

Step 8

Remove the skillet from heat and let the sauce cool to room temperature.

Step 9

Transfer the chile vinegar sauce to a clean jar or bottle and store it in the refrigerator for up to 2 weeks.

Step 10

Before serving, give the sauce a good shake or stir to ensure it's well mixed.
