  • 1 pound Ground pork
  • 0.5 pound Ground beef
  • 1 large Egg
  • 0.5 cup Breadcrumbs
  • 0.25 cup Milk
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped
  • 1 pound Tomatillos, husked and rinsed
  • 2 whole Poblano peppers, roasted and peeled
  • 1 whole Jalapeño pepper, seeded
  • 1 medium White onion, chopped
  • 2 cups Chicken broth
  • 1 tablespoon Lime juice
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large bowl, combine the ground pork, ground beef, egg, breadcrumbs, milk, minced garlic, cumin, chili powder, salt, black pepper, and chopped cilantro. Mix until well combined but do not overwork the meat.

Using your hands, shape the meat mixture into 1-inch meatballs and place them on the prepared baking sheet.

Bake the meatballs in the preheated oven for 15-20 minutes or until lightly browned. Remove from the oven and set aside.
