Ingredients

  • 4 whole Poblano peppers
  • 4 whole Anaheim chilies
  • 1 whole Jalapeño pepper
  • 6 whole Tomatillos
  • 1 medium White onion
  • 5 whole Garlic cloves
  • 1 cup Cilantro
  • 2 cups Chicken or vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Lime juice

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a large baking sheet with aluminum foil or parchment paper.

Step 2

Place the poblano peppers, Anaheim chilies, jalapeño, tomatillos (husks removed), onion (cut into quarters), and garlic cloves (skins on) on the prepared baking sheet.

Step 3

Drizzle the vegetables with 1 tablespoon of olive oil and toss to coat evenly. Roast in the oven for 20-25 minutes, until the peppers are blistered and the tomatillos are softened.

Step 4

Remove the baking sheet from the oven and let the vegetables cool for 10 minutes. Peel the skins off the poblano and Anaheim chilies and discard the skins, seeds, and stems.

Step 5

Peel the garlic cloves and transfer all the roasted vegetables to a blender or food processor.

Step 6

Add the cilantro, chicken or vegetable broth, cumin, salt, pepper, and lime juice to the blender. Blend until smooth and creamy. Taste and adjust seasoning, if needed.

Heat the remaining 1 tablespoon of olive oil in a large saucepan over medium heat. Pour the blended sauce into the saucepan and simmer for 10-15 minutes, stirring occasionally, to thicken slightly and allow the flavors to meld.
